Before the doors open - Pick tonight's event, take the crates off the delivery dock, haul them to the bars and pour the counters full, put your crew on their posts, and fit the room out. Whatever you forget now, you fix with a queue already outside. Work the floor yourself - Stand at the till and take the entry money, pour the drinks, mix the cocktails, take coats over the counter, sweep up after them. Every post can be crewed instead - or benched, and then the job is yours. Every guest wants something - They come in thirsty, get hungry, need the toilets, want their jacket back at the end. VIPs want the lounge, troublemakers want a fight, and the night's guest star wants a stocked bar and a clean floor before they will say a good word about you. Stock runs out - Four drinks to a crate, twelve to a bar, two crates in your arms and only so many slots on the rack. Sell fast enough and you spend the night carrying boxes. Count the night - The doors close, the takings land, and what came in tonight pays for tomorrow: more crew, more counter space, better decor, and eventually a bigger room. Survive the night - Police raids, blown fuses, surprise headliners. No two nights run the same.
